Why do most people take every thing that scientists say as absolute fact?

Any good scientist will tell you that today facts can at any time can very easy be debunked for example what is dark matter and is it even real . So why do people give so much trust to scientist they are human like the rest of us even stephen hawking doesn't know everything and im sure he would tell you this if you ask him
